Ingredients for the pancakes:
Batter:
- 250g self-raising flour
- 6 eggs (whisk the whites)
- 1 sachet vanilla sugar
- 2 tbsp honey/granulated sugar
- 200g cottage cheese
- pinch of salt
- a little cinnamon
- 200ml milk
Blueberry sauce
- 250g berries
- juice of half a lemon
- Orange
- Lime
- 1 tbsp honey
- 2 tbsp chia seeds
Also delicious with:
- Pecan nuts
- Chocolate chips
- Banana
- Greek yoghurt
How to make it:
- Heat up your plancha well.
- Take a small Dutch oven or a cast-iron saucepan and put the blueberries in. Add a very little water, just a thin layer. Add the juice of half an orange and put a slice of orange and lime in. Let it simmer nicely while you make the batter.
- Separate the eggs and whisk the whites until stiff.
- Combine the flour, sugar, vanilla sugar, pinch of salt and the cinnamon. Whisk in the milk and egg yolks to a smooth batter. Add the cottage cheese and gently fold in the egg whites.
- Take the blueberry sauce off the heat and add the chia seeds. The chia seeds absorb the moisture and make the sauce thicken. You can add more honey to make it a little sweeter.
- Put a knob of butter in a small bowl and grease the plancha with a piece of kitchen paper.
- Time to bake!
- Put a few big scoops of Greek yoghurt in a deep plate, grate some lemon and lime zest over it and sprinkle some chia seeds on top. Those are the disco balls for adults!
You can also add some chocolate chips, fry bananas and roast pecans as toppings.
Enjoy!
